THE REACH-IN COOLER WAS FOUND TO BE HOLDING AT 50F. ALL POTENTIALLY HAZARDOUS FOOD ITEMS HAVE ALREADY BEEN REMOVED FROM THE COOLER. A MAINTENANCE PROFESSIONAL HAS BEEN CALLED TO FIX IT.

NOTE: IF ANY POTENTIALLY HAZARDOUS FOOD ITEMS ARE STORED IN THE REACH-IN COOLER, LABEL THE FOOD ITEMS WITH A DISCARD TIME--POTENTIALLY HAZARDOUS FOOD ITEMS HELD IN THE 'DANGER-ZONE (TEMPERATURE BETWEEN 40F AND 135F)' SHALL BE DISCARDED AFTER 4 HOURS.

MULTIPLE COOKED AND COOLED FOOD ITEMS WITHIN THE WALK-IN COOLER AND COCA-COLA COOLER TO HAVE NO LABEL WITH THE DATE AND TIME THAT IS WAS COOKED, OR WITH A WITH A DISCARD DATE. ENSURE THAT ALL COOKED AND COOLED FOODS ARE LABELED WITH THE DAY ITS WAS COOKED AND COOLED OR WITH A DISCARDED--PREPARED FOOD ITEMS CAN BE STORED IN THE COOLER FOR 7 DAYS, AND THE DAY OF PREP COUNTS AS DAY 1 [750.140]. NEXT INSPECTION
OBSERVED COOKED PEPPERS WITHIN THE WALK-IN COOLER TO HAVE NO OVERHEAD PROTECTION. ALSO, I OBSERVED A BAG OF BEANS TO BE STORED ON THE FLOOR DIRECTLY OUTSIDE OF THE DRY STORAGE ROOM. PROVIDE FOR ALL FOOD PRODUCTS IN COLD STORAGE TO HAVE PROPER COVERS OR OVERHEAD PROTECTION, AND ENSURE THAT ALL FOOD PRODUCTS ARE STORED AT LEAST SIX INCHES OFF OF THE FLOOR [750.120/130]. NEXT INSPECTION
10  OBSERVED THE HANDLE OF THE TONGS STORED IN THE SHREDDED CHICKEN TO BE TOUCHING THE FOOD PRODUCT--THE FOOD ITEM IS LOCATED WITHIN THE COCA-COLA COOLER. PROVIDE FOR ALL UTENSILS TO BE STORED IN ONE OF THE FOLLOWING MANNERS: (1) IN A CLEAN AND DRY CONTAINER, OR (2) IN THE FOOD PRODUCT WITH THE HANDLE UP AND OUT OF THE FOOD PRODUCT [750.280]. NEXT INSPECTION
14  THE CUTTING BOARD LOCATED ON THE PREP TABLE IN KITCHEN--LOCATED NEXT TO THE REACH-IN COOLER--HAS DEEP AND EXCESSIVE GROOVES [750.600]. NEXT INSPECTION
